FRENCH cuisine was the order of the day in Bolton when a restaurant with a difference opened for business on September 14, 1971.
The restaurant, which was in the department of food technology — newest wing of Bolton Technical College — gave students a chance to experience catering for the public and peole got the finest French cooking at a low English price.
Some 32 students — 16 waiting on in the dining room and 16 preparing meals in the ultra-modern kitchen — would be involved in the restaurant at any one time. Restaurant manager Mr Peter Wills kept an eye on the proceedings.
It was built, along with a new games hall and food technology complex, for a total cost of £296,271. But it was not designed primarily to make a profit.
Head of the department Mr H Norris said: “It’s really to give the students practical experience in catering.”
