The former head chef of a popular Bolton restaurant has taken on his own pub. 

Quintin Cramond has spent 25 years in the food business, but he has taken a leap into the unknown with his new venture. 

Quinton, who was the head chef at Henighans Bar and Grill in Little Lever until around a month ago, is now the landlord of the Spread Eagle in Bromley Cross. 

The pub, which is in the picturesque village of Eagley, came into his hands at the end of July after having come under temporary ownership earlier this year

He spoke to The Bolton News about his plans for it, saying: "I thought I wanted something for myself and this came along, it is a cracking little pub in a lovely area and the locals are really nice. 

"I have really enjoyed it, everyone has been really friendly and keen to help. We want to get it back to how it was, a a busy community pub with families, music nights and food. 

"I wanted to bring food here, it is what I do. So we have the restaurant which provides dining in this quaint little pub. 

"Our Sunday roast went really well, but we also have swinging kebabs, there are three types of those, as well as traditional dishes such as cheese and onion pie, which we make ourselves."

At the time of interview, the pub had only been doing food for three days.

Quinton added: "We will see how it goes. Henighans got to number one on Tripadvisor when I was there, so I want to see if we can get this to that point. 

"I had never done bar work before this, so the first week before we had the kitchen open I was doing that." 

The pub has pool and darts, as well as Sky Sports and TNT channels. 

He added: "We have revamped it, it has all been redone. Work will also be done in two weeks on the bar, that is all being redone.

"It is just trying to modernise it a bit, we want a nice ambience."

A quiz night will take place every Thursday, as well as an open mic night on Wednesday, August 14 and a singer on Saturday, August 17.
