One of the newest restaurants to come to Bolton has shared a look inside its busy venue as it approaches its first month in business.
Las Iguanas opened its new branch at Middlebrook Retail Park on Saturday, May 18 promising to bring the “energy and spirit of South America” right to the shadow of Bolton Wanderers’ ground.
Its first few weeks have proven to be a big hit with Bolton diners and the restaurant has now shared the first public look inside its packed venue.
Las Iguanas managing director Lisa Gibbons said: “We’re passionate about sharing the distinctive energy, authentic flavour and spirit of South America.
“Our travels have taken us to some of the most exciting kitchens in the world from the beaches of Rio to the Amazon rainforest, from urban Buenos Aires to bustling Mexican markets where we’ve discovered delicious dishes cooked from amazing ingredients.”
So far, the energy of these bustling Mexican markets have more than found their equivalent in Middlebrook, where Las Iguanas has spaces for more than 200 people across inside and out.
The site at The Linkway, previously occupied Tex-Mex chain Chiquito, seats a total of 183 people inside and 66 inside.
Las Iguanas first opened in Bristol in 1991 and since then has spread all over the UK.
Plans had been lodged to convert the space back in April 2023 ahead of the eventual opening in May this year.
As well as normal dining, the new restaurant has also proved a popular hit thanks to its live DJ salsa nights, tropical brunches with Latin American DJs.

This has come at a period of fast-paced growth at Middlebrook, which has seen a wide range of new shops, restaurants and leisure facilities arrive in recent months and years.
Last October Five Guys opened at the retail park, bringing its total of food outlets up to 20, while Bolton institution Carr’s Pasties followed in July this year
Over the last eight months Regenerate, previously known as Age Concern Central Lancashire, opened at Middlebrook joining Skechers, TUI, Designer Sofas, and Claire’s Accessories.
It is estimated more than 12.5million visit the retail park every year.
