A new Indian street food restaurant is just days away from opening in Bolton town centre.
Owner Piyush Apte will officially open Mr Chaat next week with his business partner and chef Kishan Kakde, after being in the industry for 20 years.
The new Market Street restaurant is set to offer traditional north and south Indian cuisine, which Piyush says will be quick but also really good quality.
After moving to the UK from Ujjan in India in 2009, and obtaining a degree and a master’s in hospitality, Piyush wanted to pursue his dream of opening his own restaurant.
He said: “I was researching for the best location for a long time, and I was looking for a place with a mixed clientele, and I can see that it is very mixed in Bolton town centre.
“And I thought ‘this might work’.
“It has always been my dream.
“And when I was in university, I hoped that one day I would open my own place.”
The restaurant will offer options like puris, samosas, dosas, and chaats and Piyush says that they could make curries for customers, although the selection will be limited.
There will also be vegan options available.

He said: “We are always open to making curries if customers ask for them, but the main reason I chose the idea of street food and the location is so that we can offer something quick for those shopping, which can take around 10-15 minutes.
“The food will still be quality, but fast-paced.”
Piyush has worked in a variety of restaurants across the country, including some five-star restaurants, and worked his way up from being a waiter whilst he was a student.
His main drive throughout his career has always been making customers happy.
He added: “It’s always about being a part of their journey when they are celebrating a birthday.
“It’s emotional to be at this point and thinking about when I came here from India and when I worked as a waiter.
“You feel a sense of achievement.
“My family are always there to help me.”
Piyush will be managing the restaurant and be the front of house.
He hopes to open more restaurants in the future in the surrounding areas of Manchester.
Takeaways will also be available on Deliveroo, Just Eat, and Uber.
