A dessert shop specialising in cookie dough has opened opposite Bury Parish Church and it has proved to be a hit with customers.

Rawkies at The Rock, owned by couple Adam Greenwood, 35, and Sophie Bussey, 32, first welcomed customers on January 28 this year.

It was an idea spawned from lockdown.

Adam said: “It’s something I put together during the pandemic.

“I got made redundant from a role at EventCity and during that time I started to worry about what I was going to do as hospitality and events businesses were struggling.

“I put together a business plan a couple of years ago on a project that I hadn’t moved forward with and then during the pandemic like most people, I started baking some cookies and getting into baking to keep myself occupied and I found myself enjoying the dough more than the actual cookies themselves.”

The couple discovered there wasn’t any cafes similar to this idea in the UK so they put business plans together and decided to open their one store.

Regarding the reaction from locals, Adam said: “The reaction has been good, we’ve been quite quiet because we’re a new business and people don’t really know us yet, but people who come in think it’s a great idea and they’ve never heard of it before.

“They say nice things about me and Sophie, which is good.”

The café sells a range of items including cookie dough which can be bought in a tub or cone, milkshakes, sundaes with soft serve ice cream and cakes with vegan and gluten free options.

They are hoping to build on their vegan range as they grow in the future too.

Sophie added: “We also have a hot and cold food menu too- we recently went live with it after we opened.

“That includes a range of burgers, flatbread pizzas, salads and cheeseboards which are all customisable, so the customer will pick their set of ingredients, we have a choice of chutneys, cheeses which has been a real positive with people and sauces and burgers and they make their own meal with what they want.

“That’s gone down really well with people.”

They also do a nice range of quirky dessert cocktails alongside their alcohol menu which also has other traditional cocktails too.

Sophie said: “As we’re a dessert café we wanted dessert cocktails in there too.

“These have gone down well with people who have popped in and tried them.

“We just want to show people what we’ve got and trust us in coming and trying us.”

Although the couple aren’t from Bury, they believe they have picked the perfect location for their café.

Adam said: “We opened in Bury because of the site- we came to visit the site because we were looking for the perfect venue.

“We found this and its perfect as it’s near the Mill Gate Shopping Centre and the bars area which is good because we’re going to be doing some cocktails and bar elements, and there’s also a big space downstairs.

“As I come from an events background, I thought I can also do cocktail masterclasses and birthday parties.

“We just fell in love with the Bury area too as it’s a conservation area, it’s beautiful and the surrounding area is beautiful too and it just seems to be a really nice little area.”
