A butcher has come up with a special sausage recipe for summer.

O’Brein's Butchers in Blackrod known for their Valentine's Day ‘love sausages’ with champagne and passion fruit filling, have created a new sausage to bring home a taste of the Carribbean 

Head butcher Mick ‘The Meat’ Jerram has created the Pirate Sausage, made from pork with spiced rum and exotic fruits.

Graces Hughes Sinclair and her mum Geraldine Sinclair own the butchers and the adjoining Feast Sandwich and Café.

Geraldine said: “Mick is up to it again, he’s always something unusual like the curried goat sausages we had recently or the Easter special with chocolate.

“I think whether people like it or not just depends on what their taste buds are like, sometimes people love it and sometimes they may not want to try a hint of chocolate with the sausages.

“A lady messaged me recently asking if we could do something for Bonfire Night and I think she suggested treacle, and I’m sure Mick will deliver as usual.”

There are 12 different flavours of sausages at the butchers currently, with curried goat, blue cheese, and 'the wimbledon, with strawberries and cream in sausages as well as gluten free options available.

Geraldine said: “I don’t know where he comes up with the ideas from or the inspiration, but I do know that he’s always so switched on.

“We had a competition to guess the meat in the sausage for the curried goat ones, and it was funny seeing people try to guess, because goat is unusual for sausages.

“The pirate sausages have been doing so well for us, they’re flying off the counters.

“There was a girl who came in for her dad as he just had to try the curried goat one when it was new.

“They just love it because it’s something different and we love seeing what Mick will come up with next.”

The butchers only opened in 2019 and were hit by Covid but put their name on the map when they started delivering around the area and even went as far as Radcliffe for one woman.

One of their most known qualities is their rare flavours, which they promise to continue to keep customers guessing what could be next.
