A POP-UP bar and restaurant is the latest venue to open in The Vaults.
The Eagle and Child, which has a restaurant in Ramsbottom, opened on Friday for eight weeks.
It is the third pop-up venture the pub has taken on, having also had venues in Rossendale and Didsbury.
The pub, which serves traditional Lancashire food, including an award winning Sunday lunch, also only takes on staff, aged 16 to 25, who are unemployed.
Staff are put on paid trainee and apprenticeship schemes to work towards qualifications.
Glen Duckett, director, said: “We have 16 young people from Bolton and Bury who are currently working and training with us.
“Everyone that we take on is unemployed and we also want them to be local to the area.
“They just need to show willingness to work and learn.
“The Market Place is a great space for us to use too.”
The restaurant and bar is open from noon until 9pm for food and 11pm for the bar.
Ben Hinchliffe-Lowe, aged 24, had no qualifications and had been out of work for six weeks before he started a traineeship and moved up to an apprenticeship with The Eagle and Child.
He currently works in the kitchen and is working towards a level 2 catering qualification.
Kane Farnell, aged 22, has been with the Eagle and Child for two years and found out about the training scheme while enrolled at the job centre.
He is now training to be a supervisor and currently works front of house.
He said: “It is a great opportunity and they are very supportive here.
“It is a bit daunting to be doing the supervisor training because it is a lot more responsibility, but I think that is why they kept me on, because I have proved myself.
Meanwhile Scott Williams, aged 25, is working towards a food and beverage apprenticeship qualification and said he "has absolutely loved” his time at the pub.
Manager Rosie Hollis said: “There are too many young people that are unemployed.
“Everyone has a back story.
“If they don’t have any experience that’s brilliant, I can mould them.
“We are really lucky here, they are a brilliant bunch of kids.”
